Banana Bread

When Mum and Dad got married, one of the items the guests of the bridal shower were supposed to do was write down their favorite recipe. A Ms. Heidi Turner gave this one to Mum. (Photo after it is out of the oven.) Ingredients. 1/2 cup butter 1 cup brown sugar 2 large bananas (We had 5 small ones that NEEDED to go) 1 egg 1 1/2 cups flour 1 tsp baking soda 1/4 tsp salt (Like most of our recipes, cut it down to half at 1/8) nuts (optional) Directions. Cream butter and sugar. Mash bananas and add to mixture. Add flour, baking soda and salt. Add egg and mix. Pour into greased loaf pan and bake at 350F for 45mins or more. (Today's was done for 60mins).

Banana Bread in the breadmaker

The recipe actually calls for the bread to cook IN the bread maker. My experience with my bread maker is I end up with VERY heavy and dense bread. So I chose to mix as a dough and bake in the oven. In a bread maker: 1 cup milk 2 ripe bananas chopped 3 cups of flour (2 1/2 cups white and 1/2 cup brown) 4 tbsp brown sugar 1 tsp salt pinch of nutmeg or cinnamon 3 tbsp margarine (or butter) 1 1/2 tsp fast acting yeast nuts are optional *****one of my 2 loaves will have 3/4 cup peanut butter added to it. I set it on mix dough as I said earlier my bread machine bakes very dense bread. Because there is yeast in it you have 3 options 1:  let it rise in the machine before moving it into 1 or 2 greased loaf pans and bake 2:  let the machine bake the loaf 3:  divide mixture into 1 or 2 small greased loaf pans and set aside to rise, then bake Bake at 350 until a toothpick comes out clean. "Bon Appetit!"

Peanut Butter / Banana loaf with crunchy topping

So, I was emptying my baking cupboard (as I do every November) and found some muffin mixes.  Today's easy dessert is made from a banana muffin mix. I am calling it the ELVIS special. 1 - 220g banana muffin mix 1 egg 1/2 cup cold water 1/4 cup powdered milk 1/3 cup of peanut butter (all I had left in the conatiner) Mix well and pour into a greased loaf pan. Bake at 350 for 30-45 minutes. Remove immediately to cool. (I use glass loaf pans so mine keep cooking if I do not) 1/3 container of vanilla icing (its what I had left or make some) I used a 1/4 cup "sweet caramel sprinkle" from Pampered Chef I had http://www.pamperedchef.com/ordering/prod_details.tpc?prodId=16633&catId=12 (nuts, toffee chips and cinnamon) Mix well.  Put cake back into the baking pan when cool. Ice right in the baking dish. This was an amazing surprise mix of tastes. Definite do over. Could definitely used an over ripe banana but I didn't have any! "BON APPET...

Oatmeal Banana Bread

Portion size: 12 slices Bananas help reduce the amount of fat needed both to make this loaf and keep it moist. Let bananas ripen fully, even to the brown-skin stage, for ultimate flavour. Banana Bread

2 cups all-purpose flour 1 tsp baking soda 1/4 tsp salt 1/2 cup butter 3/4 cup brown sugar 2 eggs, beaten 2-1/3 cups mashed overripe bananas Preheat oven to 350 degrees F.  Lightly grease a 9x5" loaf pan.  In a large bowl, combine flour, baking soda and salt.  In a separate bowl, cream together butter and brown sugar.  Stir in eggs and mashed bananas until well blended.  Stir banana mixture into flour mixture; stir just to moisten.  Pour batter into prepared loaf pan.  Bake in preheated oven for 60-65 minutes, until a toothpick inserted into centre of the load comes out clean.  Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Supper was delicious tonight -- we both LOVED it . . . and I love trying new recipes.  Can you tell? Lettuce and Tomato Salad 1 tomato 2/3 curly leaf lettuce 2 radishes 1 green onion Salt and pepper Cut the tomatoes into segments and place them in a salad bowl.  Add lettuce leaves.  Finely slice radish and green onion then add them to the bowl.  Pour in 2 tbsp Classic Vinaigrette.  Add salt and pepper to taste.  Toss and serve. Pasta with Sausage and Cauliflower ½ onion, coarsely chopped 1-1/4 cups cauliflower, cut into small florets 1/2 tbsp olive oil 2 Italian sausages ¼ dried chilli peppers, minced ¾ cup chicken broth, warm 2 cups penne rigate or other short pasta Salt and pepper 2 tbsp parmesan Keep the serving dishes in the oven at the lowest setting so they are warm when you serve.  Put a colander in the sink to drain the cooked pasta so that it will be ready when needed.  Prepare vegetables.  Heat the oil in a frying pan over m...

Banana Cake Muffins (with caramel icing)

I decide about a recipe differently than some! If the batter is good enough to eat in a bowl, how can this be a bad recipe? Thank you Susan for sending me this one. This is what "I" did. In a mixing bowl, beat together: 1 1/2 cups sugar 2 end of their life bananas 1/4 cup milk 1/2 cup coffee creamer (mocha almond fudge to be exact!) 1/4 cup brick maragrine 1/4 cup shortening 1 tsp vanilla 2 eggs I beat them on low while I got the dry ingredients measured. Now add: 2 1/4 cup flour 1 1/2 tsp baking powder I beat this well and the end result was a very thick (and yummy) batter. I double lined some muffin pans ( I always double up the paper cups to give extra protection to the bottom of the muffins or cupcakes )or you can place in a cake pan. Spoon in the batter to almost full. I could make 18 good size even after I "tested" the batter. Bake for 25 - 30 minutes, and this was very accurate for me. Cool muffins on rack. Banana Nut Bread for Breadmaker

Banana Nut Bread Recipe For A Bread Machine (found online and altered) Although this is called bread, it is more of a cake. 1/3 cup vegetable oil 1/3 cup milk 2 eggs 1 tsp vanilla 2-3 mashed over-ripe bananas 2/3 cups sugar 2 - 2 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/3 cup walnuts chopped 1. Into baking pan of breadmaker add first 5 items in order. 2. Select"basic dough" setting; press"Start" 3. Allow to mix and then press "stop." 4. Add dry ingredients. 5. Press "start" again. 6. When beep sounds after 5 minutes, add nuts. ***NOTE: I never wait.... 7. The"Complete" light will flash or beep when batter is ready. 8. Place mixture in greased loaf pan or 2 small greased loaf pans. 9.
