PB chocolate cookies

Image
Leftover uses! I am using up some pb/marshmallow/chocolate squares I make every year, but this works just as well with Reese PB cups. Cookie dough: (Blue Ribbon Chocolate Vhip Cookies ~ Mrs fields Cookie Book ~ pg 10) In a large bowl with an electric mixer blend 1 cup brown sugar and 1/2 1/2 cup white sugar with 1 cup room temperature margarine/butter at medium speed. Add 2 eggs and 2tsp vanilla JUST until blended. Do not overmix. Add 2 1/2 cups flour, 1/2 tsp baking soda 1nd 1/4 tsp salt on low speed. In microwave in a bowl warm up your pb/chocolate (depending on you microwave) for 35 seconds. Not to melting, just until soft. ***You can include some stale mini marshmallows at this time too! Just add to the chocolate when you start. They added a lovely texture. Quickly dump into cookie dough, and mix at low. I needed to use a wooden spoon as mine got pretty thick (I used a lot of chocolate and marshmallow!). Using a cookie scoop, place 15 balls onto a non stick cookie sheet. Mine did n...

grilled cheese burgers

Image
I seen this on tv last night! As you would normally do, prepare 4 slices of bread (4 per burger) to make 2 grilled cheese sandwiches! Over the cheese on one sandwich lay sliced cooked bacon or sprinkle crumbled cooked bacon and close. Set aside. Over the cheese on the other sandwich, add jalapenos or onions, or leave plain. Close and set aside. Cook your hamburgers as you would normally. When they are 1/2 cooked, make your grilled cheese sandwiches. Use the sandwiches instead of buns! Top with traditional toppings. ***We found lettuce a little too hard to handle, and we all removed it, as it made the burgers slide too much. "Bon Appetit!"

Cheeseburger Pie

I made this a while ago, but never got around to posting it.  At least I don't think I did.  If it's a duplicate, I apologize!  But it was really tasty, so here it is: 1 frozen pie crust 1 pound extra lean ground beef (or turkey) 3 tablespoons chopped onion 1/2 cup water 1/2 cup bread crumbs or cracker crumbs 1/2 cup ketchup 1 1/2 teaspoons mustard (you can use  honey mustard if you have a kid in the house who loves it like in our house!) 1/4 teaspoon pepper (or to taste) 1/4 teaspoon Italian seasoning 1/2 tsp garlic, chopped  1/2 teaspoon hot chili sauce   1 cup shredded cheddar cheese Directions: Thaw one pie crust at room temperature. Quick homemade mac & cheese for lunch

I absolutley HATE KD! I love homemade baked mac & cheese but I had little to no time to make dinner today as we have lots happening today... so here's what I did. Sauce: In a small pot melt down 1/4 cup of margarine, when melted stir in 1 - 2 tsp of flour and stir to thicken into a paste. Pour in 1 cup milk slowly and mix well. Add salt and pepper if desired. Remove from heat. (*NOTE: you have just made a white sauce!!) Stir in 1 tsp mustard and 1 cup (or more if you like) of cheese *moz, marble, cheddar...whatever. Add diced chives, bacon bits or onions if you like. Set this pot aside. To prepare: 3/4 bag of your favourite pasta (boiled and drained) 2 cups of diced tomatoes *fresh or canned (I microwaved them for 2 minutes on a plate for the Quick method) Quick: Mix warm pasta with warm tomatoes in the pasta pot on med heat, pour sauce over mixture and heat till bubbly. Careful! It will stick to the bottom so keep the heat lower. This will be a very creamy mac and cheese. Oven...

Child Labour in the Kitchen Produces Tasty Results

Image
Hello, fellow foodlovers! I realize this post doesn't exactly fit the mandate of the blog, but I had to share. Thanks for letting me slip it in here :) I have a confession to make: Today, I resorted to child labour in the kitchen. That's right, I used my just shy of two-year-old daughter to help me make muffins today. OK, so it wasn't quite like that. My goal was to get her involved in the kitchen young, to teach her motor skills, life skills, to be proud of what she has made and, most of all, to spend quality time with me. The verdict: It worked. She put the paper liners in the muffin tin, she dumped all of the (pre-measured by me) ingredients, and she did the (preliminary, at least) stirring. I then dumped the whole tasty mess into their expertly lined tins, and we waited. An excruciating 20 minutes later, our noses (and the timer) lead us back to the oven to retrieve the warm little babies from the oven. We done good. The muffins turned out just lovely. My daughter ate 2...
