Baked beans

I wanted to make some comfort food for John and I knew he'd love this. 3 cups of dry navy beans (I used a blend) 6 hot dogs sliced into thin rings ** soak them all for 8 hours  or soften the beans by boiling  then simmering them for 10 minutes In a crock pot: 1 medium yellow onion chopped 1 1/2 cups ketchup 1 1/2 cups brown sugar 1 1/2 cups water 1 tbsp ground mustard 1/2 cup molasses salt to taste and softened beans Mix it well, cover and cook for 10-12 hours. Stir occasionally near the end of the cooking time. This can be made a day ahead  and reheated on the stove on low heat. "Bon Appetit!"

Baked Sweet and Sour Chicken

Mum got the recipe from a co-worker's wife. It was delicious and Dad even went back for seconds. We had this with instant rice and a broccoli salad from Metro. Ingredients 3-4 boneless, skinless chicken breasts We used 3 this time round but could definitely go for 4. Salt and pepper to taste 1½ cup cornstarch 3 eggs, beaten ¼ cup canola oil 1 cup granulated sugar 4 tablespoons ketchup ¼ cup white vinegar ¼ cup apple cider vinegar 1 tablespoon low sodium soy sauce 1 teaspoon garlic salt Instructions 1.       Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper. 2.       In separate bowls, place cornstarch and slightly beaten eggs. Individual Hamburger Casseroles

Or as I also like to call them, Mini meatloaf. This dish has been a staple since I was a kid. I even used it for a Food's class project. Everyone in my family loves these tiny treats and if it could make more than 8-10, I'm sure we'd all eat more than we should. Ingredients 1lb ground beef 2 tbsp minced onion 1/2 cup bread crumbs 1 egg- slightly beaten 1/2 cup milk Dash of sage Salt and pepper to taste 1/4 cup brown sugar 1/4 cup ketchup 1 tsp dry mustard Dash of nutmeg Makes 8-10. Directions Heat oven to 350F. Combine ground beef, onion, bread crumbs, egg, milk, sage, salt & pepper. Pat mixture into un-greased muffin tins. Make a hole using the small end of a wooden spoon in the center of each. Combine brown sugar, ketchup, mustard and nutmeg and place some in each. Bake for 25mins.
