Ingredients: 1/2 pound lean ground beef (90% lean) 1/2 cup chopped onion 2 garlic cloves, minced 1 teaspoon chili powder 1/2 teaspoon ground cumin 1 can (14-1/2 ounces) diced tomatoes  *drained (I used mild Mexican but diced with seasoning would definitely work too) 3/4 cup ricotta cheese or cottage cheese 1/4 cup shredded cheese (tex Mex) 2 tablespoons minced fresh cilantro 1 can rinsed black beans 8 whole wheat tortillas (6 inches) 1/2 cup shredded cheddar cheese Crushed doritos Directions Preheat oven to 400°. In a large skillet,  Cook and crumble beef with onion  and garlic over medium heat  until no longer pink, 4-6 minutes.  Stir in spices and tomatoes. Bring to a boil; remove from heat.  In a small bowl,  Mix ricotta cheese, shredded cheese, beans  and 2 tablespoons cilantro. Place 2 tortilla in a rectangular  baking pan coated with cooking spray.  Layer with half the meat sauce,  2 tortilla, Cheese mixture,  another 2 tortilla  remaining meat sauce Last

Ingredients 1 cup finely chopped onion 1/4 cup butter, cubed 1 tub (500g) cottage cheese 1 large egg 1/2 teaspoon onion powder 1/8 teaspoon pepper 2 cups mashed potatoes (made with added milk and butter) I cheated and used boxed! 3\4 cup shredded cheddar cheese Lasagna noodles, cooked and drained 1 box is 18 noodles. 1/4 cup shredded cheddar ***note: as this was our main dish for supper I added cooked chopped bacon to the potatoes ******************* In a skillet, sautee onion in butter and set aside. In a bowl, combine cottage cheese, egg and onion salt and set aside. In another bowl, combine mashed potatoes and 2/3 cup cheddar cheese adding sauteed onions and bacon if desired. Place 2 noodles in a greased 13x9-in. baking dish. **These will be your lost noodles. If anything sticks it will be them! Now place 4 more noodles Top with 1\2 the cottage cheese mixture  and 4 more noodles Top with all the potato mixture 4 noodles Top with the other 1\2 of the cottage cheese 4 nood

spinach and shrimp salad with bacon

Toss together and then refrigerate: 1 bowl fresh spinach 1\2 red pepper julliened 1\2 cucumber diced Sliced mushroom ? Shredded carrots ? 1/4 cup sliced almonds ***************** Fry up 4 strips of bacon, Drain and chop finely Reserving 1 tsp of bacon drippings in pan. ****************** In a bowl mix together: 1-1/2 pounds uncooked shrimp (31-40 per pound), peeled and deveined 1 teaspoon epicure big burger seasoning 1 green onion finely chopped Now toss cook it in the reserved bacon drippings. Then lay to cook on paper towels. ********************** Mix dressing together: 1/3 cup cider vinegar 1 tablespoon olive oil 1 teaspoon Dijon mustard 1/2 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon pepper In a large serving bowl, combine ripped spinach with assorted veggies and almonds. Refrigerate while prepping everything else. Cook bacon over medium heat until crisp,  stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 1 tsp of drippings. S

sausage and potatoes

This is a super simple prep  For a yummy fall meal. 2 sausages per person (any kind) In a casserole baking dish, Lay all the meat down the center. 1-2 potatoes per person * peeled and cubed 1\2 carrot per person * peeled and sliced 1 onion diced small (or onion powder) In a large bowl Toss all the veggies in (olive?) oil Sprinkle with 2 tsp of your favourite spice * Italian, paprika.. I used coconut Thai (bulk barn) Now place the veggies around the meat Leaving meat exposed. Cover the meat in your favourite sauce. * this will depend on your meat. I used Honey mustard, but tomato sauce or bbq Sauce will work too. Cover with foil. Bake for 1 hour at 350.
