Rhapsody in Blueberry

Eat, Shrink & Be Merry cookbook The next time will be tried with strawberries. Filling 6 cups fresh blueberries 1/3 cup granulated sugar 2 tbsp cornstarch 2 tbsp freshly squeezed lemon juice 2 tsp grated lemon zest (I cut down to 1 since I was using dried) Topping 1 cup quick-cooking rolled oats (not instant) 1/2 cup all purpose floour 1/3 cup packed brown sugar 1/2 tsp ground cinnamon 1/4 cup butter, melted 2 tbsp apple juice or orange juice 1 cup low fat vanilla yogurt, light whipped topping Directions 1) Preheat oven to 375F. Spray 9x13 inch baking dish with cooking spray. Add blueberries. Sprinkle blueberries with granulated sugar, cornstarch, lemon juice and lemon zest. Mix well and set aside. 2) To make topping, combine oats, flour, brown sugar and cinnamon in a medium bowl. Add melted butter and juice. Using a fork, stir until mixture resembles coarse crumbs. Shocklate Cheesecake

For Father's Day I searched through the Eat, Shrink and Be Merry cookbook and found a delicious chocolate cake... and realized it would take too long to make. Next I found this recipe and those that got a slice really enjoyed it. We suggest having a scoop of vanilla ice cream or glass of milk with it. Ingredients 1 box (440g) low fat brownie mix (I used Betty Crocker Fudge Brownies) 2 cups 1% cottage cheese 1 cup light sour cream (not fat free) 1 pkg light cream cheese at room temperature 1 cup granulated sugar 1/3 cup unsweetened cocoa powder 1/4 cup all purpose flour 6 oz semi sweet (not unsweetened) chocolate squares, melted and cooled slightly 1 cup fat free egg substitute or 4 whole eggs 1 tsp vanilla Chocolate sauce for drizzling (optional) 1-- Spray a 10" (or 9" works as well) springform pan with cooking spray. Prepare brownies according to package directions, baking in springform pan instead of regular cake pan. Brownies should bake in about 20mins...

Margarita Cookies

Sooooo delicious. Not too soft and not too crunchy. Just right. Makes 30 1 cup butter, softened scant 3/4 cup superfine sugar (or substitute with regular sugar) finely grated rind of 1 lime 1 egg yolk, lightly beaten 2tsp orange liqueur or 1tsp orange extract 2 1/2 cups all purpose- flour pinch of salt To Decorate 1 1/4 cups icing sugar 3Tbsp white or gold tequila 3/4tsp water Mixing Time Preheat the oven to 375F. Line two baking sheets with parchment paper. (If no paper, lightly grease the pan with butter.) Put the butter, superfine sugar and the lime rind into a bowl and mix well with a wooden spoon, then beat in the egg yolk and orange liqueur or orange extract. Sift together the flour and a pinch of salt into the mixture and stir until thoroughly combined. Scoop up tablespoons of the dough and put them on the prepared baking sheets, spaced well apart, then flatten gently. Bake in the preheated oven for 10-12mins until light golden brown.
