Margarita Cookies

Sooooo delicious. Not too soft and not too crunchy. Just right. Makes 30 1 cup butter, softened scant 3/4 cup superfine sugar (or substitute with regular sugar) finely grated rind of 1 lime 1 egg yolk, lightly beaten 2tsp orange liqueur or 1tsp orange extract 2 1/2 cups all purpose- flour pinch of salt To Decorate 1 1/4 cups icing sugar 3Tbsp white or gold tequila 3/4tsp water Mixing Time Preheat the oven to 375F. Line two baking sheets with parchment paper. (If no paper, lightly grease the pan with butter.) Put the butter, superfine sugar and the lime rind into a bowl and mix well with a wooden spoon, then beat in the egg yolk and orange liqueur or orange extract. Sift together the flour and a pinch of salt into the mixture and stir until thoroughly combined. Scoop up tablespoons of the dough and put them on the prepared baking sheets, spaced well apart, then flatten gently. Bake in the preheated oven for 10-12mins until light golden brown. White Russian Cupcakes with Kahlua Icing

Read about these cupcakes over a year ago and finally got around to making and sharing. Thanks to those who were the guinea pigs:) CUPCAKES: 24 paper liners for cupcake pans 1 package (18.25 ounces) plain yellow cake mix 1 package (3.4 ounces) vanilla instant pudding mix 1 cup vegetable oil 3/4 cup whole milk 4 large eggs 1/4 cup vodka 1/4 cup plus 2 Tbsp. Kahlua, divided use 1 tsp. pure vanilla extract FROSTING: 1 cup heavy whipping cream 2 Tbsp. powdered sugar 1 Tbsp. Kahlua 2 Tbsp. semisweet chocolate shavings PLAN OF ATTACK Place rack in center of oven; heat oven to 350 degrees. Line 24 cupcake cups with paper liners. Set pans aside. In large mixing bowl, combine cake mix, pudding mix, oil, milk, eggs, vodka, 1/4 cup Kahlua and vanilla extract. Blend with electric mixer on low speed for 30 seconds. Easy Light Icing

Ok, I am making a layered strawberry shortcake but need a light whip cream style icing. 1cup milk 1 pckg vanilla pudding (any kind) 1/4 cup icing sugar Beat until smooth then fold in: 1 tub of cool whip/no name frozen topping Refrigerate until thickened and spread on angel food cake layers. I cut an angel food cake into 3 layers and layered strawberries and this icing between each layer. YUMMMMMMMM! "Bon Appetit!"

Banana Cake Muffins (with caramel icing)

I decide about a recipe differently than some! If the batter is good enough to eat in a bowl, how can this be a bad recipe? Thank you Susan for sending me this one. This is what "I" did. In a mixing bowl, beat together: 1 1/2 cups sugar 2 end of their life bananas 1/4 cup milk 1/2 cup coffee creamer (mocha almond fudge to be exact!) 1/4 cup brick maragrine 1/4 cup shortening 1 tsp vanilla 2 eggs I beat them on low while I got the dry ingredients measured. Now add: 2 1/4 cup flour 1 1/2 tsp baking powder I beat this well and the end result was a very thick (and yummy) batter. I double lined some muffin pans ( I always double up the paper cups to give extra protection to the bottom of the muffins or cupcakes )or you can place in a cake pan. Spoon in the batter to almost full. I could make 18 good size even after I "tested" the batter. Bake for 25 - 30 minutes, and this was very accurate for me. Cool muffins on rack.
