Vegetable and Bean Ratatouille

Preparation 10 min / Cooking 30 min 250 calories per serving [See all nutrition info] 2 tbsp olive oil 2 cloves garlic, pressed 1 onions, finely chopped 1 1/2 cup green/snap beans 2 zucchini, cut into 1,5 cm dices 1 aubergines / eggplants, small size, cut into 1,5 cm dices 1 yellow or red sweet peppers, cut into 1,5 cm squares 1 cup canned tomatoes (diced) 3 cups red beans (canned), rinsed and drained 1 pinch salt [optional] ground pepper to taste 1 pinch cayenne pepper [optional Mince or press the garlic and chop the onion. Heat the oil in a saucepan over medium heat. Cook the garlic and onion 4-5 min until lightly coloured and soft, paying attention not to let them burn. Prepare the vegetables . Boil or steam the green beans. Drain, cut into 2 cm pieces, and set aside. Dice the remaining vegetables into 1,5 cm pieces and add to the saucepan with the garlic and onion. Vegetarian Chili with Tofu

Tofu haters are going to go ew! yuck!  I didn't even try to serve it to Hal, the king of the tofu haters.  And it is his loss.  This chili was lovely and meaty and flavourful.  It also freezes very nicely (without the sour cream). 1 onions, finely chopped 2 cloves garlic, minced 1/2 dried chili peppers, minced 1 carrots, finely diced 1 stalk celery, finely diced 1/2 green peppers, finely diced 3 tbsp canola oil 1 tsp ground cumin 1 tbsp brown sugar 260 g firm tofu, finely diced 1 2/3 cup red beans (canned) 1 1/2 cup canned tomatoes (diced) 1/2 cup water approximately 1 pinch salt [optional] ground pepper to taste 2 tbsp fresh cilantro [optional] 1/3 cup Cheddar cheese, grated Keep the serving plates in the oven at the lowest setting so they are warm when you serve. Pasta Fagioli Soup

1 pound lean ground beef or ground turkey breast 1 large onion, chopped 1 large carrot, peeled, halved and sliced 2 large stalks celery with leaves, thinly sliced 2 cans (1 pound each) unsalted tomatoes, crushed  tsp dried basil 1 tsp dried oregano 1 tap crushed fresh garlic 1/4 tsp ground black pepper 3 cups beef broth 1 can (1 pound) navy or garbanzo beans, rinsed and drained 6 ounces elbow macaroni or ziti pasta Place the ground meat in a 4-quart pot and brown over medium heat, stirring constantly to crumble, until the meat is no longer pink.  Drain off any excess fat. Add the onion, carrot, celery, tomatoes, seasonings and beef broth to the pot and bring to a boil over high heat.  Reduce the heat to low, cover and simmer for 15 minutes, or until the vegetables are tender. Add the beans and pasta to the pot, cover and simmer for 7 to 9 minutes or just until the pasta is al dente.  Be careful not to overcook as the pasta will continue to soften as ...

Santa Fe Chicken

Mum cooked this up the other night and it was quite delicious. Tastes really good heated up too. Ingredients: 1 1/2 cups instant white rice, uncooked 19oz can black beans, rinsed. (We used only 14oz) 1 yellow pepper, chopped 10 fl oz can condensed cream of chicken soup 1 soup can water (or milk if you want it creamier) 1/4 cup chopped fresh cilantro 4 small boneless skinless chicken breasts (1lb) 1/2 cup of salsa 1 cup Tex Mex Shredded Cheese Taco Seasoning Italian Seasoning Oregano Make It: Heat oven to 400F Combine rice, beans and peppers in a 9x13" baking dish. Mix soup, water(or milk), salsa, and cilantro; pour over rice mixture. Cut up chicken into small pieces and mix it with everything. Add oregano, Italian and taco seasoning in a sprinkling. Bake 35mins or until chicken is done. Top with cheese; bake until cheese is melted.

Pam's No Name Chili

1 lb lean ground beef 1 onion, sliced 6 large mushrooms, sliced (or use no name canned mushrooms) 1 cup chopped celery 1 10 oz can no name dark red kidney beans 1 12 oz can no name corn 1 19 oz can no name beans in tomato sauce 1 14 oz can no name tomato sauce 1 28 oz can no name tomatoes (whole, stewed, diced or whatever) 4 splashes  of no name hot sauce 12 splashes  of no name Worchestershire sauce 1 - 2 tsp (or to your taste) no name chili powder Put all ingredients in a large pot.  Cook slowly over medium or lower heat, stirring frequently for a minimum of 2 hours.  You can also cook in the oven or crock pot.  The longer it is cooked, the better it tastes. You can serve with rice and top with a daub of sour cream and grated cheese. You can use brand name products if you want to . . . LOL . . .

Sandra's Sweet & Sour Bean Salad

Very nice flavour!! 2 cups beans (frozen, canned or fresh. If fresh, cook until crisp tender) 1/4 cup onion 2 strips of bacon diced, cooked until crisp 2 tbsp of peppers, red, green or yellow 4 tbsp cider vinegar 4 tbsp brown sugar In a small skillet, cook bacon until crisp; remove to paper towel. Keeping 2 tbsp of drippings, saute onions. Stir in vinegar and brown sugar, heat thoroughly. Drain beans and place in bowl. Stir in onion mixture. Top with crisp bacon.

Chili con Carne

This chili recipe is quite lovely, mild and a very interesting flavour. I Served it with brown rice. I think I might enter this recipe into a chili cook off if we had one. 2 servings 390 calories per serving 1/2 onions, finely chopped 1 clove garlic, minced 1/4 dried chili peppers, minced 1/2 green peppers, diced 1 tbsp canola oil 200 g ground beef, lean 3/4 cup canned tomatoes (diced or chopped) 1 tbsp tomato paste ground pepper to taste 1/2 tsp ground cumin 1 tbsp brown sugar 1/3 cup beef broth 1 tbsp water, if necessary 1-1/2 cups red beans (canned) salt to taste 1/2 tbsp fresh cilantro, chopped (optional) 1/2 lime (optional) Prepare the vegetables. Finely chop the onion, mince the garlic and chili pepper, and finely dice the bell pepper. Heat half of the oil in a pan over medium heat. Texas Corn Chowder

I made this for lunch today, and it was a hit! Very easy, fast and made with pantry ingredients you could keep on hand all the time. So far I'm still loving this book! Mix the following in a medium pot, simmer for 5 minutes (or until heated through and bubbling) and serve. That's it!! One 15-ounce can whole kernel corn, drained One 15-ounce can cream-style corn One 14.5-ounce can diced tomatoes with garlic and onions (mine had Italian seasonings) One 15-ounce can black beans, drained and well rinsed 1/2 cup low-sodium chicken broth Serve topped with generous portions of shredded cheddar cheese, chopped green onions and a dollop of sour cream (if desired). I haven't woken up Taylor from his nap to taste test this one yet. I think it tastes really really good. It looks pretty good too. And it was quite simple to make. Tortilla Casserole 6 servings 1 pound extra-lean ground beef 1 (15-oz.) can red kidney beans, drained and rinsed 1 (14.5-oz) can diced tomatoes, undrained 1 (4.5-oz.) can chopped green chilies 1 package taco seasoning mix 6 corn tortillas 3/4 cup nonfat sour cream 4 oz (1 cup) grated mozzarella or cheddar cheese 2 tbsp chopped fresh cilantro Heat oven to 350 F. Spray nonstick skillet with non-stick cooking spray. heat over high heat until hot. Add ground beef; brown 8-10 minutes or until thoroughly cooked, stirring constantly. Black Bean and Rice Salad

I made this salad for Paula's baby shower a couple of weeks ago because I thought it would go nicely with the spare ribs that Deb was bringing. I was right. Ingredients: 1 can (15 ounce) black beans, drained and rinsed 2 cups cooked long-grain rice, chilled 1 green bell pepper, finely chopped 1/2 red bell pepper, finely chopped 1 tomato, seeded and chopped 2 to 3 green onions, finely chopped 3 tablespoons olive oil 2 tablespoons lime juice 1/2 teaspoon Dijon mustard 1/2 teaspoon sugar 1/4 teaspoon ground cumin 1/4 teaspoon ground black pepper fresh chopped parsley or cilantro for garnish, if desired Preparation: Combine beans with rice, green and red bell pepper, tomato, and green onion. In a small bowl, whisk together the oil, lime juice, mustard, sugar, cumin, and pepper. Add dressing to beans and rice and stir gently to blend ingredients.
