Banana Bread

When Mum and Dad got married, one of the items the guests of the bridal shower were supposed to do was write down their favorite recipe. A Ms. Heidi Turner gave this one to Mum. (Photo after it is out of the oven.) Ingredients. 1/2 cup butter 1 cup brown sugar 2 large bananas (We had 5 small ones that NEEDED to go) 1 egg 1 1/2 cups flour 1 tsp baking soda 1/4 tsp salt (Like most of our recipes, cut it down to half at 1/8) nuts (optional) Directions. Cream butter and sugar. Mash bananas and add to mixture. Add flour, baking soda and salt. Add egg and mix. Pour into greased loaf pan and bake at 350F for 45mins or more. (Today's was done for 60mins).

Individual Hamburger Casseroles

Or as I also like to call them, Mini meatloaf. This dish has been a staple since I was a kid. I even used it for a Food's class project. Everyone in my family loves these tiny treats and if it could make more than 8-10, I'm sure we'd all eat more than we should. Ingredients 1lb ground beef 2 tbsp minced onion 1/2 cup bread crumbs 1 egg- slightly beaten 1/2 cup milk Dash of sage Salt and pepper to taste 1/4 cup brown sugar 1/4 cup ketchup 1 tsp dry mustard Dash of nutmeg Makes 8-10. Directions Heat oven to 350F. Combine ground beef, onion, bread crumbs, egg, milk, sage, salt & pepper. Pat mixture into un-greased muffin tins. Make a hole using the small end of a wooden spoon in the center of each. Combine brown sugar, ketchup, mustard and nutmeg and place some in each. Bake for 25mins.

Oatmeal Banana Bread

Portion size: 12 slices Bananas help reduce the amount of fat needed both to make this loaf and keep it moist. Let bananas ripen fully, even to the brown-skin stage, for ultimate flavour. Ingredients 1   cup   (250 mL) quick-cooking rolled oats 3/4   cup   (175 mL) all-purpose flour 3/4   cup   (175 mL) whole wheat flour 1/2   cup   (125 mL) packed  brown sugar 1-1/2   tsp   (7 mL) cinnamon 1   tsp   (5 mL) baking powder 1   tsp   (5 mL) baking soda 1   egg 1-1/2   cups   (375 mL) mashed  bananas , about 3 1/3   cup   (75 mL) vegetable oil 1   tsp   (5 mL) vanilla 1   cup   (250 mL) dried cherries or raisins (I used walnuts) Topping 2   tbsp   (30 mL) quick-cooking rolled oats Preparation In large bowl, whisk together rolled oats, all-purpose and whole wheat flours, sugar, cinnamon...

Original Temptation (Apple Crumble Cupcakes)

As usual I was bored and decided to try another recipe. These were done a few months ago and I know all the guinea pigs enjoyed them. ;) Original Temptation: Apple Crumble Cupcakes 1 1/2 cup plain flour 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/8 teaspoon ground nutmeg 1/4 teaspoon salt 1 cup sugar 2 teaspoon baking powder 1/2 cup butter 3 eggs 3/4 cup milk 1 cup grated apple Crumble : 2 teaspoon cold butter 2 Tablespoon brown sugar 2 Tablespoon plain flour 1/2 cup oatmeal 1/4 cup chopped walnuts Icing : 4 oz. butter 3 1/2 cup icing sugar 1 teaspoon vanilla essence PLAN OF ATTACK Preheat oven to whatever works best for you (usually 180C/350F).
