Apple and onion pork tenderloin

A pork tenderloin is very versatile.
On sale they can be anywhere
From $3 to $10
Depending on the size you need
Making this a good meal for a big family.


I prepped this hours ahead 
FROM FROZEN!

1 tablespoons oil
1 pork tenderloin

In a skillet, heat 1 tablespoon oil 
over medium-high heat. 
Brown tenderloin on all sides.

Remove from heat. 
***For the casserole dish I was using, 
I cut the pork in half.
Spread pork with:

3 tbsp honey mustard

Place into an appropriate size
Covered casserole dish
Sprinkle with salt and pepper
And cover.

***good time to pull out that spiralizer
you just had to have!!!!

In a 2 cup measuring cup:

1\2 cup apple juice
1\2 tsp cinnamon
1\8 tsp nutmeg
2 medium apples, thinly sliced
***the apples soaking in juice
Will stop them from browning.

Now fill the measuring cup off with:

1 onion, halved and thinly sliced thin

Set aside until dinner time.
***************************

Roast pork in oven
For 15-20 minutes at 400.

Meanwhile; in a skillet heat:

1 tbsp oil over medium heat

Saute JUST apples and onion 

For 7 minutes. 

Stir in liquid and bring to a boil. 

Reduce heat and simmer uncovered, 
until apples and onion are tender, 
5-8 minutes. 

Remove pork from oven; 
Let stand 5 minutes before slicing. 
Serve with apple mixture.

We also had mixed veggies and pasta.
