hot chicken salad
An LDO favourite we love seeing come in from Teena. I do not have "her" recipe but this one was good too.
*note! If doing for a buffet make it gluten free by using Hellmans!
Prep 3 to 4 cups cooked poultry -shredded or cubed (cut into small pieces)
In a large bowl mix:
1 cup chopped celery
1\2 cup diced onion
1 can sliced water chestnuts (cut in half)
1 cup shivered almonds
1 1\2 cups mayo
1 1\2 cups sour cream
1 can cream of chicken soup
2 tbsp lemon juice
Salt and pepper
Stir well and pur into a baking dish.
Top with:
1 cup french fried onions
Or
Crushed potato chips
1 cup diced green onion.
Bake for 20 minutes at 350
Cover with 2 cups shredded cheese
Bake for 10 minutes more
Or until cheese is melted.
Serve with side salad.
