enchilada casserole


In a pan sautee:

2 tbsp butter
1 sliced onion
2  chicken breasts precooked and diced small

Do not overcook onions
Set aside to cool

In a bowl mix:

1 cup shredded cheese
1 cup sour cream
1\3 cup salsa
2 tbsp taco seasoning

Add meat.

Lay out 8 tortillas
And fill evenly.

Roll and lay seam side down 
In a greased casserole dish.

Pour 2 cans (20oz) green enchilada sauce
Over enchiladas
And top with shredded cheese.

Bake uncovered for 25 minutes
At 350

Sprinkle with cilantro and serve.

Tonight's side dish is brought to by:
Dainty rice -Mexican flavour

To my rice cooker I add:

1cup water
1 tsp oil
Diced celery and onion
The seasoning package
The can of rice

Cook and serve when thickened.

We added some crushed tortilla chips 
Or doritos
For a crunch on top

 *** enchilada sauce is basically tomato sauce with a few spices. Green enchilada sauce means it was made with green tomatoes. If you can't locate this, the recipe online is super easy to make.
