coconut chicken strips


In one bowl beat:
2 eggs 
2 tsp sesame oil

In another bowl mix:
3\4 cup shredded coconut
3\4 cup bread crumbs
3 tbsp toasted sesame seeds
Salt and pepper

Cut 4 regular chicken breasts
Into 1\2" strips

One by one dip chicken
Into egg mixture
Then bread crumbs
And place on a tray 
lined with parchment paper.

Bake at 400 for 10 minutes
Turn and cook 5 more minutes.

In a measuring cup mix:

1\3 cup pineapple juice 
with 1 tsp cornstarch
Then add
1 1\2 tsp mustard
1\2 cup plum sauce

Bring to a boil
(Approx 2.5 minutes)
In the microwave.

I am a fan of knorr side kicks.

In large pot mix:
2 packages of white cheddar brocolli
With 1 cup frozen brocolli
3\4 cup of co+ordinating pasta
2 1\2 cups milk
2 1\2 cups water
2 tbsp margarine
Bring to a boil 
Turn heat way down and stir occasionally
Turn heat off when flipping chicken pieces!
