lasagna Mexican style

So I just finished making these! I recommend following these instructions! So many items and even prepped I was scrambling at the end.

I am starting this with your prepped items.

Open 1 large can tomato sauce
*** found in spaghetti sauce aisle

For 2 lasagna I used 2 boxes (40 pcs)
Of lasagna noodles
Prep and set aside

Dice a bunch of green onions the tops into a small bowl and the thicker ends into another

Grate 1 large brick of cheese (any)
I used havarti with jalapenos for mexican
And set aside in Bowl #1

Bowl #2
mix and set aside:
1/2 container sour cream
1/2 brick cream cheese at room temperatire
1  750ml container cottage cheese (or 2 small)
1 cup salsa
1 tbsp black pepper
1/2 each Diced red and green peppers
3 stalks of celery diced
1 can (15oz )of your favourite bean 
(pinto, black, kidney whatever)
1 1/2 cups frozen corn
1/2 tsp (apple cider?) Vinegar
***this is where I would also add my spinach or zucchini, jalapenos etc if desired
Divide into 2 bowls.

Bowl #3
mix together:
1/4 cup flour
3 tsp chili powder
1 tsp cumin
1 tsp Garlic powder
1/2 tsp paprika
1/2 tsp Italian seasoning
1/4 tsp cayenne pepper

Bowl #4
mix together
3 1/2 cups broth
1/3 cup tomato paste
1 can favourite diced tomatoes
*** I used 6 fresh ones
4oz green chillies (I will not be adding)
1 tsp cocoa powder
1 tsp sugar
1/4 tsp cinnamon
Fry:
2lbs ground beef
Diced green onions - heavier ends
4 to 6 garlic cloves crushed
Do not drain! The seasoning will absorb
Any liquids in the pan.

Add bowl #2 (seasonings) to frying pan
And stir well.

Add bowl #4 (broth) to frying pan
And simmer on medium 10 to 15 min
Or until as thick as you'd like.
Longer is thicker.
In lasagna pans (I used 2) start layering

1/4 can tomato sauce 
(to stop pasta from sticking)
5 Noodles
1/4 Meat mixture
5 noodles
1/2 of cheese mixture (one of bowl #2's)
5 noodles
1/4 meat mixture
5 noodles
1/4 can Tomato sauce
(To stop pasta from drying out)
1/2 of Grated cheese (bowl #1)

Do the same in the second pan.

Bake at 350 for 30 minutes
Top with the rest of diced green onions
And crushed Doritos!

Serve with sour cream, corn bread
And tortilla chips!

This recipe will make 2 XL lasagna or 4 cake size pans!!!!!!!
