Dice 4 chicken breasts (I did from frozen) Place in deep skillet. Add 1 can whole kernel corn 1 tbsp parsley And 1 cup chicken boullion Cook thoroughly Add 2 tbsp chives Lots of black pepper And 1 brick cream cheese Stirring well. Add diced jalapenos if desired now. Stir and cook until thickened Then set aside to cool. Par boil 1 box of jumbo shells. Drain and place into cold water To keep them flexible. In a food processor dice up: 1 green pepper 3 green onions 1 small cooking onion 3 tbsp taco seasoning (1 pouch) 1 pint cherry tomatoes Or use a large bottle of your favourite salsa! Toss this in a bowl with: 1 can rinsed black beans. When chicken and sauce has cooled Mix with black bean\salsa mixture. Using a spoon Fill each shell with you mixture. Place in a greased shallow casserole dish. If there is extra filling drizzle on top of shells. Top with tex Mex cheese. Freeze what you aren't going to use now. Bake for 15 to 20 min from thawed.
